Our family had a snow day and we have a tradition of making homemade hot chocolate on snow days. As we were making our normal recipe, we realized we had butterscotch baking chips for another butterbeer recipe I was thinking of creating (maybe there’ll be more about that later.)

We decided this was the time to recreate a copycat of this delicious recipe from the last time we went to The Wizarding World of Harry Potter in Universal Studios in Orlando. It is only served in the winter months (which we learned in all our research while waiting for it to be safe to go during covid.) It can be found in some of the restaurants there, and we were all in heaven at the very first sip.
My children and I taste tested butterscotch and white chocolate baking chips to get just the right amount of flavor from the butterscotch, but if you are a lover of butterscotch you could absolutely replace all the chips for a 12 oz. bag of butterscotch chips. We tend to lean more towards a caramel and vanilla flavor in our butterbeer creations.
We know your family is going to love this recipe as much as we do – it is INCREDIBLE! Seriously though, it’s probably one of the tastiest hot cocoa type recipes for a cold winter day we have ever tasted. We loved playing HP music while making it, and thinking of the memories we made at Universal.

HOT BUTTERBEER

Cook time: 30 minutes to 2 ยฝ hours
Yield: 8 servings

After taking a trip to Universal Studios Harry Potter World in Orlando, we knew we had to recreate this magical drink – which is only served in the colder months. It is the Butterbeer version of hot chocolate, and it just might be our favorite of all the Butterbeer creations!
INGREDIENTS:
5 cups 2% milk
2 cups heavy whipping cream
1 โ cup (8 oz.) butterscotch baking chips
โ cup (4 oz.) white chocolate chips
1 teaspoon vanilla extract
ยฝ teaspoon almond extract (optional)
1 cinnamon stick or ยผ teaspoon cinnamon (optional)
Fresh whipped cream *recipe follows

INSTRUCTIONS:
- Slow Cooker: Add all ingredients into a slow cooker. Cook on โlowโ 2 to 2 1/2 hours, stirring every 30 minutes. Serve immediately or switch the slow cooker to โwarmโ until ready to serve. Top mugs with fresh whipped cream if desired.
- Stove Top: Add all ingredients to Dutch oven style pot over medium heat. With a flat bottom wooden spoon scrape the bottom of the pan, stirring continuously until chocolate chips melt. Turn down to low and simmer for up to an hour (until the milk is scalded, starts smelling amazing, and gets a bit frothy). Top mugs with fresh whipped cream if desired.

WHIPPED CREAM – double for extra cream
1 cup heavy cream
ยผ cup powdered sugar
1 teaspoon vanilla extract
1 ยฝ Tablespoons caramel drink flavoring syrup like Torani (optional)
Add heavy cream to a stand mixer with whisk attachment, or in a mixing bowl with a hand-held mixer. Whip until the cream begins to thicken. While continuing to mix, add sugar, vanilla, and flavoring syrup. Mix until whisk pulled out of cream leaves soft or stiff peaks depending on your desired consistency. Don’t overmix, you’ll get chunks of butter in your cream.
*SCIENCE TIP: Whipping cream is a great example of physical change (as opposed to chemical change). The cream changes from a liquid to a solid, but is still chemically cream and air.
